American food is laden with genetically modified organisms, toxic chemicals, preservatives, industrial oils, and artificial colors and flavors, all permitted in our food supply largely because of the inadequate “Generally Recognized as Safe” (GRAS) policy, which allows the food industry to monitor itself. We view that as a material conflict of interest that has taken a large toll on human health. In addition, emerging evidence shows that many Americans consume far too many processed simple carbohydrates, leading to insulin resistance and metabolically-driven chronic diseases such as diabetes, heart disease, obesity, and cancer. Sadly, the U.S.D.A. has endorsed a food pyramid that encourages citizens to eat a diet that is likely contributing to the unprecedented rise in disease, which may be preventable. We believe many Americans, armed with the right information, have the power to reverse chronic disease by making effective, long-term lifestyle and diet changes.
